In general the work consists of: Replacement of an existing high-capacity commercial dishwasher with a new commercial dishwasher, installing an interior grease interceptor in the existing dishwasher room. Revise flooring as needed to install grease interceptor, and reconfigure plumbing, HVAC, and electrical to connect to the new equipment.
